Global Gastronomy: Traveling from Tokyo to NYC with Armand Arnal

Pointy Snout’s been popping up on menus around the globe of late, including these stunning dishes from two of the world’s hottest restaurants and chefs. We’re thrilled to see our caviar making a full circle, geographically and aesthetically speaking.

At New York’s Flora Bar, the newly opened restaurant on the lower level of the Met Breuer museum, Ignacio Mattos is placing quenelles of Pointy Snout Ossetra on golden omelettes – a plateful of geometric beauty perfectly in keeping with the restaurant’s artful environs.

Further afield, acclaimed Michelin star chef Armand Arnal of La Chassagnette, near Arles, is serving up Pointy Snout in striking graphic presentations - including this dish that Chef Armand recently presented at a fete in Tokyo. Our mouths are watering all the way from the U.S.
