Sustainably farmed in Northern California, Avancé is produced from the roe of White Sturgeon, a species native to the Pacific Northwest. Aged at least 90 days, it has a sweet and fresh fragrance, and a taste that is rich and lasting, yolky and delicate.


Pointy Snout caviar comes from two different species of sturgeon. Our Caviar Avancé and Caviar de Table are both from White Sturgeon (Acipenser transmontanus), native to the Pacific Northwest. Our Caviar Avant-Garde, in both premium and imperial grades, and our Caviar Ossetra Nouveau, are from Russian Sturgeon (Acipenser gueldenstaedtii), the only species that produces genuine Ossetra with its grand, robust flavor.

We offer Pointy Snout caviar in different “styles” from each species—the difference created by degrees of maturity. Our Caviar AvancéCaviar de Table, and Caviar Avant-Garde are fully-aged for at least 90 days, while our Caviar Ossetra Nouveau, a seasonal offering, is non-aged, freshly-produced. (For an analogy, think of the evolving enjoyment of drinking a finely matured, complex Bordeaux versus the quick, uncomplicated satisfaction of drinking Beaujolais Nouveau.) Whether matured or fresh, each style carries its own unique hit of pleasure to fit the mood or occasion.

Whichever style and flavor you choose, be assured that the caviar for your individual order is hand-selected and packed on the day we ship it to you. We never "pre-pack" our tins. Your order will arrive in a chilled cooler with frozen gel ice packs to keep the contents in tip-top condition, whether it is delivered locally by messenger or via FedEx next day service. Please unpack your box upon receipt and immediately place the caviar in the refrigerator (never the freezer!). We recommend consuming it tout suite - preferably on our signature camel bone spoons, designed to help you capture the flavor and texture to the fullest. Unopened, caviar will remain fresh for up to eight weeks in a refrigerator (30° - 35°F. ).
