Our premium flagship Avancé line is created from the roe of White Sturgeon (Acipenser transmontanus), which is native to the Pacific Northwest.  We source from a Northern California pioneer in sturgeon acquaculture.

Sustainability 

Pointy Snout caviar is made from sustainably-farmed sturgeon.  What does that mean?

Sustainable sturgeon farming is a method that has no, or minimal, impact on wild fish resources. The optimal measurement of success is a ratio of 1:1 – meaning, one pound of wild fish used to feed one pound of fish raised.  As well, sustainability refers to recycling water and energy resource.  In sum, it is designed to leave an entirely neutral footprint on the environment.

Put simply, we work with artisan producers who care about the sturgeon and the wider ecosystems they affect.  We care about the fate of an entire class of species that has been on earth for 250 million years—and whose very survival has been put in jeopardy in the past 20 years. We are conservationists.  We believe that responsibility is a matter of principle and practice.
