An irreverent reinvention of a venerable luxury. The go-to brand for transparency and responsibility. Caviar unbridled, with a modern conscience.

We never wonder why we love our caviar.  It’s such a constant friend—always reliable, typically inspired, never less than uniquely pleasurable.  We think it should be the new staple, an exceptional contemporary gladness.  No ambiguity; no hesitation; no running for cover.

Be warned: it’s been known to cause unexplained outbreaks of happiness.

Our premium flagship Avancé line is created from the roe of White Sturgeon (Acipenser transmontanus), which is native to the Pacific Northwest.  We source from a Northern California pioneer in sturgeon acquaculture.

While we often source Ossetra caviar from around the world, our primary source is a North Carolina producer which is the first acquafarm in the US to raise authentic Russian Sturgeon (Acipenser gueldenstaedtii), and hence produce authentic Ossetra caviar.

Pointy Snout Caviar is never pasteurized or frozen, and is 100% chemical-free.

Sustainability

Pointy Snout caviar is made from sustainably-farmed sturgeon.  What does that mean?

Sustainable sturgeon farming is a method that has no, or minimal, impact on wild fish resources. The optimal measurement of success is a ratio of 1:1 – meaning, one pound of wild fish used to feed one pound of fish raised.  As well, sustainability refers to recycling water and energy resource.  In sum, it is designed to leave an entirely neutral footprint on the environment.

Our US caviar producers work closely with leading marine biologists and researchers—at the University of California-Davis and North Carolina State University, respectively—to meet standards for sustainability established by the Monterey Bay Aquarium and the Marine Stewardship Council.

Put simply, we work with artisan producers who care about the sturgeon and the wider ecosystems they affect.  We care about the fate of an entire class of species that has been on earth for 250 million years—and whose very survival has been put in jeopardy in the past 20 years. We are conservationists.  We believe that responsibility is a matter of principle and practice.
